Sunday Brunch at home on a budget - baking cornbread
What's for brunch on a Sunday? The kids often enjoy pancakes, eggs and/or sausage for example. Whenever something needs baking, they love to help pour ingredients & stir batter. We just finished prepping some corn bread batter to baking in the oven at 400 degrees for 15 minutes. The kids love to devour cornbread & we keep it simple with the very inexpensive Jiffy cornbread mix that calls for adding just 1/3 cup of milk and one egg - so simple!- love it.
Meanwhile, the kids are enjoying snacking on cereal (gluten free Honey Nut Cheerios) & green apples as well as glasses of milk & orange juice while they wait for that cornbread to be ready. They already know that dinner this evening will be oven baked lamb chops & they cannot wait! Lol
